Description
Sodium Carboxymethyl Cellulose (CMC) is a stabilizing agent that easily dissolves in cold or room-temperature water without the need for heating. It is odorless and tasteless, providing viscosity to the solution. Sodium Carboxymethyl Cellulose is a food additive used as a thickener, stabilizer, and emulsifier.
Sodium Carboxymethyl Cellulose appears as a white crystalline powder that dissolves easily in both hot and cold water. It is a hydrocolloid (a carbohydrate-based colloid) and a hydrophilic derivative of cellulose, modified from natural cellulose by substituting parts of its original structure with methyl and carboxymethyl groups to improve its functional properties.
Uses in the Food Industry
- Ice Cream Production: Helps retain moisture and reduce the movement of water molecules, resulting in a smooth and creamy texture while preventing the formation of large ice crystals.
- Bakery Products (e.g., bread and cakes): Improves texture and stability.
- Biscuits: Acts as an emulsifier to stabilize fat and water mixtures.
- Other Foods (e.g., chewing gum, margarine, peanut butter): Functions as an emulsifier to improve consistency and stability.
- Sausages and Other Processed Meats: Enhances water retention and improves product juiciness.
- Glazed or Sugar-Coated Foods: Provides a glossy appearance and better coating quality.
How to use: Dissolve the powder in water by stirring until completely dissolved before mixing with other ingredients.
Usage Rate: 0.1 - 2.0% or as appropriate for the product type.
Storage: Store in a tightly closed container, away from moisture and direct sunlight.
Caution: Keep out of reach of children and food not intended for use with CMC.
